What is for lunch? It's Friday morning and I wanted to make something easy for lunch. Had some prawns in the freezer which I had kept marinated last week.
So I thought I will go ahead with that.

CHEMMEEN ROAST / PRAWNS ROAST


Step 1

========

Prawns cleaned  - 1 kg
Ginger - 2 tb spoon
Garlic paste - 2 tb spoon
Curry leaves
Green chillies - 5-6
Juice of 1 lemon
salt - to taste
turmeric powder - 1/4 t spoon
Oregano - 1/2 t spoon
oil - just for shallow frying

Grind ginger, garlic, curry leaves & green chillies and mix it with the prawns. Add salt, lime juice, turmeric powder & oregano.

Keep it refrigerated  for overnight or at least 1 hour.

Shallow fry and keep it aside


Step -2

Next prepare the gravy.

Big onion - 2  no.s
Ginger & garlic paste - 2 t. spoon each
curry leaves - to garnish
green chillies - 6-8 chopped
oil - to sauté
Coriander powder - 5 t spoon
soy sauce - 2 t spoon
Green chilly sauce - 2 t spoon
Tomato - 1
Water - 1/4 cup

Heat oil in a kadai and sauté ginger garlic pasted and chopped green chillies. Add curry leaves, fry them all and keep aside.

Next sauté the grinded onion till brown and add the fried prawns along with ginger garlic and green chillies. Mix well. Add coriander powder and sauté for 1 minutes. Then slowly add soy sauce and green chilly sauce and mix well. Add chopped tomatoes and stir well. Add 1/4 cup of water  and put on simmer for around 15-20 minutes . Ready to serve. Goes well with chappathi or rice.

I am thinking from where to start, what should be the first post? Should it be something sweet, spicy or sour. Should it be Indian or mix of other cuisines.

I feel I should start with a sweet item. Here you go.



Orange in Cream

Ingredients:

 
1. Condensed milk - 1 tin, Orange Jelly - 1 pkt, Milk - 1 tin (I measured with the condensed milk tin)
     Custard powder - 2-3 tb. sp., Orange essence or vanilla essence for flavouring.
 
2. Whipping cream - 1 sachet ( I use the powder one Dream Whip)
 
3. Orange - 1 (peel and shredded)
 
Method:
 
Step 1 - Mix together the jelly powder, milk and condensed milk and boil it. It may form like crumbled milk and you add custard powder. Mix well and boil till it is thick. Add flavour. Keep on stirring and then remove from fire. Spread it in a tray and keep it for cooling
 
Step 2 -  Take half cup of milk and add the whipping powder and whisk it till it is thick cream.
Spread the cream on top of the mixture.
 
Step 3 - Decorate it with shredded orange and serve cold.
 
If you like Orange Blossom water, you may replace Orange essence with the same.
